Ever wonder if there is a better way to access pure meat?

That same question burned and drove me to find the answer. I started building a dry aging and harvesting area in my own home. Strange idea but I had to know the difference. The dry aged meat had the flavor, complexities and cook-ability that we had never experienced before.  

We partnered with a local USDA authorized butcher and can now bring the same amazing beef straight from our family to yours! We hope you enjoy.

The Rolwes family has been raising cattle for generations, and you can taste it. From using rotational grazing to mimic natural herd movements to gentle farming practices to keep our cattle calm and enjoying the pastures. Their diets are monitored closely every day primarily grazing on Missouri grassland pastures supplemented with grain and corn to get the perfect balance of protein and fiber.

The genetics and breeding are monitored to produce exceptional temperament, mother instincts, and size.

The butchers we partnered with dry age each harvest for 21 days to achieve exceptional flavor and texture. They harvest using artesian methods to produce the highest quality pieces of beef available. For the beef connoisseur ask about our custom dry aging options for 1/4, 1/2 and whole sides.

Where does your beef come from?

Our cattle are raised here in the beautiful state of Missouri, grazing in the fields of the Ozark plateau region. Primarily feeding on pasture grass they are supplemented with a variety of grains and corn to balance their diet between carbs, fibers and proteins. At harvest each side is dry aged for 21 days with our local partner Center Cut to ensure we provide you with the finest quality beef we have to offer.

do you deliver?

Yes absolutely! We deliver anywhere within the contiguous 48 states. Delivery prices vary based on distance and order size.  

How long will it take to get my beef?

Full side orders will be harvested hen ordered and can be ready for pickup or shipping in 21 days. Our curated boxes or individual orders ship out between Monday - Wednesday depending on the shipping address. If you have concerns or deadlines you are concerned about give us a call.

How do I give my cut preferences?

If you place your order for full, half or quarter side of beef fill out the cut sheet with your preferences. If you need help, just give us a call, no robots I promise! We would be happy to assist.

Do you offer dog food?
